Healthy Choc Chip Cookies

Why not whip up these delicious chocolate chip cookies as a treat for the kids afternoon tea! They are healthy and packed full of goodness and the kids won't notice the difference ;) As a mum I know how important it is to have a simple recipe to follow, thats quick, tasty and nutritious! I make a batch of cookies each Sunday for lunch box fillers during the week. You can substitute the flour for ones you prefer and if you're a vegan simply swop the butter for coconut oil and you can increase the sugar to 3/4 cup for a sweeter taste. You get the picture! These are the ones my kids and I like, Enjoy x
Organic Ingredients;
1/2 cup (125g) butter, softened
1/2 cup (125g) coconut sugar
2 eggs
1 tsp vanilla
1 cup (150g) rice flour
1 cup (150g) spelt flour
1 cup (85g) shredded coconut
1/2 cup (95g) cacao nibs
1 tbsp chai seeds
1 tsp baking powder
Method;
Preheat oven to 200°C (180°C fan-forced). Cream butter and sugar until pale and fluffy. Add eggs one at a time, mixing well between each addition. Add vanilla.
Fold through flours, baking powder, coconut and "choc chips"
Place tablespoon-sized balls on trays lined with baking paper.
Bake for 8-10 minutes until golden.
Notes
Makes 24.
Cool slightly on the tray before removing to a wire rack to cool completely.
These cookies keep well in an airtight container in the pantry for 8-10 days.
